Recipe: Shrimp Stuffed Portobello Mushroom Caps

Erin's Homemade Shrimp Stuffed Portobello MushroomsI’ve always loved mushrooms… well, maybe not always, but at least for a long time. ūüėČ For special occassions, I make mean crab stuffed mushrooms. But on a regular ol’ day, it’s a little too pricey for me to buy all that crabmeat and stuff all those mushrooms! I changed up my recipe a little bit and decided to make SHRIMP stuffed portabello mushrooms. This recipe yields 2 servings (2 stuffed caps/person).

I was quite surprised with the recipe and how everything turned out. And these little mushroom caps were definitely more filling than one would have thought!

For my recipe posts, I’ll include a few images here and there of the work done and the final product. You’ll see bits and pieces of my kitchen in the pictures, but maybe I’ll do a “kitchen tour” later on. It’s fairly small, but perfect for me. I’m actually adding more storage to one of the closests so once that’s complete, we’ll talk about that kitchen tour. ūüėČ

Shrimp-Stuffed Portobello Mushrooms

Ingredients:
Mushrooms and Shrimp Filling
4 medium portobello mushroom caps
3 ounces shelled, deveined, cooked shrimp (about 6 medium shrimps) chopped
2 tablespoons (1/2 ounce) grated fresh Parmesan cheese
1/2 lemon for juicing
1 teaspoon snipped fresh parsley
3 cream cheese spread, lightly seasoned with chive and onion powder
1/4 teaspoon Dijon mustard
1/2 small garlic clove, pressed

Crumb Topping
2 teaspoons butter or margarine
1/2 small garlic clove, pressed
11/2 tablespoons unseasoned dry bread crumbs

Directions:
1. Preheat oven to 400¬įF. For mushrooms, place mushrooms, gill sides up, on Small Bar Pan.
2. For shrimp filling, chop shrimp (probably best to use a food chopper). Grate Parmesan cheese. Zest lemon to measure 2 teaspoons zest. Snip parsley. In a mixing bowl, combine shrimp, Parmesan cheese, lemon zest, parsley, cream cheese spread, mustard and pressed garlic; mix well. Divide shrimp mixture into four equal portions; spoon into mushroom caps and flatten slightly.
3. For crumb topping, place butter and pressed garlic in a prep bowl; microwave on HIGH 20-30 seconds or until butter is melted. Stir in bread crumbs. Sprinkle crumb topping evenly over shrimp filling. Bake 18-20 minutes or until crumb topping is golden brown and filling is hot. Serve warm.
Yield: 2 servings

Day 5. Roadtrip back home. (Mike)

My grandmother had a stroke yesterday. Her 3rd one in the past year. Grandma basically raised me when I was young. My parents worked 2 jobs each and had no time to watch my sister and me so¬†they shipped us to grandmas. So I consider¬†grandma my 2nd mom. Growing up, grandma was so strong-willed. She had 11 kids. She basically raised all of them with no college education and couldn’t speak a lick of english when she came to the states. She is the glue that holds all of us together. Of course, I’m her favorite. I mean come on. Its ME!! To see her like this hurts my heart. I feel so helpless. =/ Half of her body can’t move and she is unable to speak.

I think the toughest time for me while trying to stay meatless¬†is during road trips. Erin and I travel a lot. We visit my family in Upstate New York every other month. We also visit her family in NYC every so often. And I can’t forget moms Atlantic City weekend trips. We usually start our trip at Wawa. Cheap gas and good eats. We usually order something from the deli and get snacks which include beef jerky for our trip. We do this pretty much EVERY time we travel. It’s so routine that I do this even when I travel without Erin. It’s crazy how who you don’t notice how so many fast food spots do not cater to vegetarians. Well, I noticed and it sucks. Ahhh!! So frustrating. Fish Filets at McDs¬†can get old fast. I definitely need to plan my¬†road trips¬†¬†better.¬† All in all, we survived our trip through the blizzard and I made it up without meat. =) SUCCESS!

Day 3 (late post)- Pork Chops for Dinner… whhhhaaat?!! (Mike)

Day 3…

How did I avoid the temptation of meat today? I just didn’t bother to eat. LOL. I was so busy at work¬†I didn’t get a chance to go out and pick something up. I munched on some pretzels until I got home. So when I¬†did get¬†home I was starving. As soon as I opened the door I smelled pork chops.¬†She was cleaning out the fridge and decided to make the pork chops for the boys. Erin served¬†some stuffed salmon for us.¬† I don’t know if I was super hungry or the stuffed salmon was really amazing but I didn’t mind the fish at all. It was stuffed with awesomeness. I had two servings.Those of you who know me, I hate fish. I can eat sushi and tolerate filet fish but I hate it. So it was ironic that Erin and I agreed to be pescatarian¬†because I¬†HATE fish. When I was young, I remember eating a baked fish my mom made and choking on a bone. It happened to me TWICE. That basically did it in for me with fish. I also don’t like how certain fish taste like it literally just came out of the water. Why would you even bother eating something that could potentially kill you and taste so bad? I guess everyone has their own preference. I can go for hours about how I hate the fish but we’ll just end it there.

¬†Today’s salt on the wound moment was from non other than my buddy Barrington. This dude calls me at midnight to tell me how great they were.¬† He even called his mother to ask her why her pork chops was not as good. Thanks for letting me know what I’m missing out on buddy. Jerk! lol.

All in all, I think we did pretty good. Day 3 has come and gone. Only 362 days left.

Surprisingly Good! (Erin)

In all honesty, it doesn’t seem so rough right now.

My work has bought my lunches the past two days and I felt like it would be harder than it really was. They all got roast beef, turkey, ham, and cheesesteak sandwiches. Yesterday, I opted for the tuna steak sandwich which, I can’t lie, was REALLY TASTY!! Tuna steak? The sound of it actually made me cringe a little but with a little pesto sauce on top and fresh veggies in the mix it was so worth it! And get this! You’ll be proud of me… I only ate half of the sandwich for lunch.¬† The other half for dinner. ūüėČ Yeah, I’m good like that!

Yesterday’s menu: Yogurt smoothie, 1/2 of a brie and apple sandwich and… those spinach stuffed salmon filets I talked about the other day. I wasn’t able to make it for dinner¬†two nights ago¬†because we were on a bit of a time crunch. Mike and I ended up eating at the bar we met his family and friends at. What was my dinner then, you ask? 4 bites of his shrimp wrap, 2 waffle fries and a few little dips of artichoke dip. Resistance! ¬†It ain’t so bad and fish is surprisingly good!

So tonight, I’ll be getting back onto my gym routine. I’ve been really bad at that lately. I started training in January for a 5k run but unfortunately, with all of my family events and the ridiculous amounts of snow, I fell off that wagon fairly quick. But with my new lifestyle and new goal, I’ll be starting all over. Now you may think 5k isn’t a long run, but to me… it certainly is. I was never a sporty or athletic person. This is kind of a big deal. The race is in October and I can’t wait!

I use the C25K (Couch to 5K) program. I downloaded the app on my iPhone and did not think a little app that cost a dollar was going to whoop my butt. I WAS WAY OFF!! The interval training can really kill you… especially if you don’t have the right running shoes. Talk about some serious shin splints. Ouch! I would suggest the C25K program to anyone who is just starting out with 5K training. Check out the site for the full program for FREE at http://www.c25k.com/. During my first and only two weeks training, I went from running about 2.4 miles in 31 minutes up to 3.5 miles in the same amount of time. I can’t wait until it’s a little nicer out and the grass starts to show a little. I’d love to start jogging outdoors.

Does anyone have any tips for new runners? I’d love to hear them and also if you have any suggestions on the best running shoes!

p.s. I apologize to anyone that I’ve misinformed. Mike and I are not semi-vegetarians. We are pescatarians. We still eat fish and dairy products. Again, I’m sorry…

Ugh! The Tempation! (Erin)

The love connection I have with pho is extreme. It’s hot and delicious and warms my soul. There’s something about a bowl of pho that I can’t deny and it keeps me coming back for more. In all honesty, I can eat a huge mixing bowl full of homemade pho. Three of your servings would equal one of mine. It satisfies all of my senses! It has soft and luscious chunks of meat and the most perfect noodles ever made. It’s so colorful with all its red spicyness and green veggies. The broth fills the air with this undescribable aroma. And it just tastes so wonderful that I almost cry every time I take a bite.

With all that said, you can imagine how tempted I was last night. Mike’s family moved to the neighborhood and invited us over for dinner… pho and chicken wings. Knowing this ahead of time, we brought scallops to make our own broth. We THOUGHT about using the beef broth they already had but the little pieces of meat would have made me weak in the knees. Mike prepared a seafood broth instead and it still tasted wonderful. I was actually full off of a standard sized bowl. Whodda thunk!?

My food intake yesterday was just a yogurt in the morning, 5 fish sticks with no sauce for lunch and a fruit cup, and for dinner… we had the seafood “pho” soup. Today’s menu? I’ve already consumed a 10 ounce organic yogurt smoothie. That was around 7:30 this morning, and usually when I eat around that time I get hungry by 10. I’m still feeling pretty satisfied though. Lunch is a tuna sandwich with fresh pineapple chunks on the side. And dinner? Salmon filets stuffed with creamed spinach and steamed veggies.

I have a feeling tonight is going to be another difficult night. The plan is to go out for happy hour with Mike’s cousin since it’s his last night visiting Maryland. You know what that means… more temptation. Mike and I woke up this morning and planned it out though. We’ll just eat before we meet up with everyone! Because not only did we give up meat for 364 more days… we gave up beer for Lent. Tonight’s going to be a doule whammy!

It takes a lot of thought when you’re a vegetarian. I have a feeling there will be a lot planning ahead when we’re invited to events and family gatherings. Hopefully the fam and our friends understand we’re under a lot of pressure here… and they try and support us.

Day 1- What was I thinking… (Mike)

If someone were to tell me a week ago that I would give up red meat¬†and chicken, I would bet you a million dollars that I would never be drunk enough to agree. On top of that, I would BLOG about it. HA! I would of thought you were CRAZY!!! But here I am, no meat for 24 hours and I’m typing about it. Who knew?!! My name is Mike and I am not going to eat meat for 365 days, pray for me…

Day 1/ 364 days left and counting…

I guess I should start on how much I love chicken/meat and how much this going to hurt. I grew up on chicken, quite literally. My father has been managing a chicken¬†processing plant¬†for over 25 years and mom for 20 years. My mom has mastered every chicken recipe known to man. My family was never good at showing affection. Mom showed her love through food and I guess chicken was the core. Why? Cause it’s¬†free. LOL

So Erin and I broke the news to my family last night over beer pong. Of course, they thought we were crazy. Hell, after thinking about it I started to agree with them. How¬†am I¬†supposed to give up chicken/meat?¬†¬†I guess this is why I agreed to blog about it. I figured it would keep¬†me honest. After the jokes and laughs, my family was very supportive. They actually invited Erin and me¬†for a nice traditional¬†Laos dinner. What was for dinner? Pho, of course. For those of you¬† who don’t know, Pho is a Vietnamese noodle dish. As my cousin Steve would say, a knee slapper!! The main ingredient is meat, oxtail¬†and noodles. LOL. Did I mention Pho is one of favorite dishes? I think I can eat Pho everyday. I’m pretty sure I eat Pho twice a week already. What a first day. To add salt to the¬† wound, Mom made her awesome fried wings. Thanks for the support guys (note the sarcasm)!! To be honest, I’m glad our first day was like this. It showed everyone how serious we were about this decision. Also, on my bad days; I can¬†always say, “can’t beat day one!!”. But can it? What if this is just the beginning? What if it gets 10 times worse. I guess time will tell. At least I’m not alone. I have my partner in crime and hopefully support from some followers. But for now, LQTM.

Meatless Mike from the Bu…

Officially Meatless… (Erin)

Well… here it goes.

Today is officially Day 1 of the meatlessness. ¬†February 22, 2010. ¬†Oh boy…

I’ve been with Mike for just almost nine years. ¬†Since we first met, we’ve pretty much been known as big eaters. ¬†Our first¬†year of dating consisted of going to a different buffet every week. ¬†Our relationship continued to grow and so did our¬†stomachs. ¬†After the first couple of years, the buffets got a little old and we switched up to other yummy restaurants. ¬†The¬†staff knew us by our first names… We ate just about anything and everything.

After nine years, we’ve both realized that our weight will never be as low as it was when we first met. ¬†But… we do need¬†to do something about it and the biggest thing is to change our eating lifestyle. ¬†I shared my feelings on this with my mom¬†and she asked how much I weighed. ¬†Her only response was, “OW, Erin!!!” ¬†Then Mike felt the need to call me “Bonecrusher.”¬†I think that was when it hit me… something needs to give.

So instead of stuffing my face with $1 cheeseburgers and other crap, I’ve decided to eat more veggies, fruits, and grains.¬†But not only that… I’m going meatless. ¬†After doing some research, Mike and I will apparently be in the “semi-vegetarian”¬†category. ¬†Didn’t realize how many types of vegetarians are out there! ¬†We’ll be eating seafood and dairy products… just¬†absolutely no meat.

I have a feeling it’ll be pretty tough at first… especially since our roommate has ground beef and steaks in the freezer.¬†But hopefully after the first few weeks, it won’t even phase me. ¬†I’m not even the type of person to drool or crave steaks¬†or red meats like that… but chicken. ¬†Ugh. ¬†Dear sweet chicken… that’ll be tough to give up.

And don’t worry folks, I won’t be going to an all “noodle and instant food” diet. ¬†Hell no. ¬†That doesn’t fly in my house.¬†I’ll be making a trip to the wholesale club after work today to pick up some fresh fish and shrimp. ¬†Then… off to GNC to¬†grab some vitamins! ¬†That’s another big worry… not getting all of the vitamins I need at first since I pretty much just¬†changed my lifestyle over night. ¬†Vitamins will be necessary.

Mike and I will be weighing ourselves weekly and keeping you all updated because not only are we going meatless, but we’re¬†exercising regularly too! ¬†ūüôā ¬†Be proud of us! ¬†I’m actually really excited about all of this… but terrified at the same¬†time. ¬†LOL!
